Soba with Chicken and Vegetables
Ingredients
- Skin-On Chicken Breasts 15 oz
- Soba Noodles 15 oz
- Carrot 5 oz
- Orange Bell Peppers 5 oz
- Peanut Sprouts 0 oz
- Scallions 5 oz
- Soy Sauce to taste
- Rice Vinegar for Sushi 0 fl oz
- Garlic 4 cloves
Step-by-Step Guide
Step 1
Cut the chicken breast into thin strips, add soy sauce (enough to coat the meat), add rice vinegar and minced garlic. Mix well and let marinate for 30 minutes.
Step 2
Cut the carrot, bell pepper, and onion into thin strips.
Step 3
Cook the soba noodles in boiling water for 5-6 minutes.
Step 4
Sauté the chicken in a small amount of oil. When it's almost cooked, add the vegetables, a few tablespoons of water, and cook until fully done.
Step 5
Mix the result with the noodles and add the soybean sprouts. It can be served hot or cold.
