
Soba Noodles with Turkey 'Five Spices' and Vegetables

Description
Turkey can easily be replaced with chicken breast or a piece of beef. For soy sauce lovers, the dish may not be salty enough, so you can drizzle soy sauce before serving.
Ingredients
- Soba Noodles 5 oz
- Chicken fillet 1 piece
- Courgette 1 piece
- Fennel 1 head
- Daikon 1 piece
- Carrot 2 pieces
- Garlic 1 clove
- Grated Ginger Root 1 piece
- Peanut Butter 3 tablespoons
- Black sesame seeds 1 tablespoon
- Toasted Sesame 1 tablespoon
- Scallions to taste
- Yakiniku sauce 1 tablespoon
- Chinese Five Spice 1 tablespoon
Step-by-Step Guide
Step 1
Cut the piece of turkey, about the size of a chicken breast, into strips about 1 cm thick.
Step 2
Place the turkey in a plastic container, add the Five Spice Powder and teriyaki sauce. Close the lid and shake well. Refrigerate for 30 minutes.
Step 3
Meanwhile, prepare the vegetables.
Step 4
Cut the zucchini in half lengthwise and then crosswise into not very thin slices.
Step 5
Peel two small or one large carrot and cut diagonally into large rounds about 5 mm thick.
Step 6
Take a piece of daikon that is approximately equal in volume to the sliced carrot. Peel and cut into pieces roughly the same size as the carrot.
Step 7
Slice the medium-sized fennel into half-rings.
Step 8
Peel a piece of ginger about 5 cm long and cut it into thin matchstick-sized strips. Crush the garlic with a knife and chop it.
Step 9
Boil the soba noodles according to the package instructions, drain, and rinse with cold water to stop the cooking process. Set the cooked soba aside.
Step 10
In a wok, heat the peanut oil over high heat. Add the garlic and ginger and sauté for about 1 minute, ensuring the garlic does not burn.
Step 11
Add the turkey and stir-fry, stirring constantly, for about 3 minutes until it is coated with a golden crust.
Step 12
Add the prepared zucchini, fennel, carrot, and daikon. Stir-fry for another 2 minutes, stirring constantly. It is important to catch the moment when the vegetables are still crunchy.
Step 13
Remove from heat, add the soba, a tablespoon of sesame oil, and sesame seeds, and mix well.
Step 14
Serve, garnished with chopped green onion.
