Soba Noodles with Shrimp in Oyster Sauce

Description
If you don't have soy sauce or cream, that's okay — you can prepare it without them, but the flavor of the dish will be more pronounced. The finished dish can be garnished with black sesame seeds.
Ingredients
- Rice Noodles 10 oz
- Peeled Cooked Shrimp 20 oz
- Oyster Mushrooms 4 tablespoons
- Onion 1 head
- Cream to taste
- Soy Sauce to taste
- Black sesame seeds a pinch
- Saffron a pinch
- Ground coriander to taste
Step-by-Step Guide
Step 1
If you have all the ingredients, place a pot of water on the stove. When it boils, add soy sauce (3–4 tablespoons for 300 g of noodles) instead of salt. The flavor of the soba cooked this way will be milder. On another burner, place another pot with a mixture of soy sauce and cream (about 100–150 g for half a kilo of shrimp). Boil the shrimp for about five minutes.
Step 2
If you don't have soy sauce or cream, just put a pot of salted water on the stove. In this case, you don't need to do anything with the shrimp yet.
Step 3
Add the noodles to the boiling water. Cook according to the package instructions, but usually ten minutes is enough.
Step 4
Once the noodles are cooked, drain them in a colander and rinse with cold water.
Step 5
Chop the onion and sauté it a bit in a pan.
Step 6
Add the oyster sauce and spices to the onion. Sauté for a minute or two until you smell a light aroma of coriander.
Step 7
Add the shrimp to the mixture. Stir.
Step 8
Sauté the mixture for five minutes.
Step 9
Add the cooked noodles. Stir.
Step 10
Sauté briefly and serve.
