Step-by-Step Guide

Step 1

Clean the halibut, rinse, dry, fillet, and cut into 130-gram pieces for smoking. Soak a piece of apple or alder wood in water, then place it at the bottom of a high-sided skillet. Heat until smoke appears, then place the halibut on foil over the wood, cover with a lid, and smoke for 5 minutes. Remove from heat and let cool. Brush the fish with olive oil, honey, and lemon juice. Bake in the oven for 7 minutes at 355°F.

Step 2

Prepare the garnish. Blanch the green beans in boiling water for 2 minutes. Then place them in cold water and cut them lengthwise into four pieces. Add cilantro, lemon juice, sesame oil, salt, and roasted cashews.

Step 3

Make the pumpkin mousse. Peel and chop the pumpkin randomly. Cook the pumpkin in fish broth for 20 minutes until tender. Add tom yum paste (or simply fresh ground chili pepper) and lemon juice. Blend the cooked pumpkin with cream until smooth.

Step 4

To serve: place pumpkin puree on a plate, add the beans, halibut, and garnish with herbs.
