Ingredients
- Vegetable Oil 1 tablespoon
- Soy Sauce 0 fl oz
- Duck Breast 2 pieces
- Garlic 1 head
- Sugar 2 teaspoons
- Red Grape Juice 5 fl oz
- Cranberry 5 oz
- Rosemary 1 teaspoon
- Campbell's Beef Broth 5 fl oz
- Sauerkraut 5 oz
- Corn Salad 1 bunch
- Parsley to taste
Step-by-Step Guide
Step 1
Prepare a marinade from soy sauce, chopped garlic, sugar, and red wine, and marinate the duck breast for 3-4 hours.
Step 2
Spray the marinated breast with vegetable oil and smoke it over an open flame for 40-50 minutes. For aroma, add a sprig of juniper to the fire.
Step 3
While the meat is smoking, prepare the cranberry sauce: cook the cranberries (50 g) in beef broth with rosemary for 3-4 minutes and strain through a sieve.
Step 4
Arrange the salad leaves, pour the sauce onto the plate, and place the sliced duck breast in it. Serve the remaining fresh cranberries and sauerkraut as a side dish, and optionally garnish with parsley.
