Ingredients

  • Smelt 25 oz
  • Pak choi salad 5 oz
  • Spinach 0 oz
  • Potato 10 oz
  • Whole egg 4 pieces
  • Butter 5 oz
  • Salt to taste
  • Dried Nori Seaweed 0 oz
  • Vegetable Oil 0 fl oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Clean and rinse the smelt. Finely chop the seaweed (any three kinds, to taste) and mix it with a small amount of butter. Separate the bok choy into leaves.

Step 2

Peel the potatoes and boil them until they are partially cooked, then cut them into wedges and fry in half of the vegetable oil until golden brown.

Step 3

Sauté the bok choy and spinach lightly in butter with two teaspoons of water.

Step 4

For the sauce, heat egg yolks with a tablespoon of water in a double boiler while whisking. Then, continue whisking and add the butter with the seaweed. The sauce should be light and frothy.

Step 5

Fry the smelt in the remaining vegetable oil until browned. Season with pepper and carefully add salt, as the main seasoning will come from the seaweed.

Step 6

Start by placing the potatoes, bok choy, and spinach on the plates, then add the sauce, and finish with the smelt.
