You can check readiness by trying to pierce a potato with a knife. If the knife goes through easily, you've overcooked them. We need to feel a slight resistance.

While the young potatoes are boiling, preheat the grill in the oven and prepare the secret ingredient. Finely chop the parsley and garlic together with a large knife. You can also use dill, rosemary, thyme, or any combination of herbs that pair well with potatoes. Pour the herbs and garlic with olive oil and add a pinch of salt.
