Ingredients

  • Bone-in Beef 20 oz
  • Turnips 4 pieces
  • Celery salt 7 stalks
  • Leek 2 pieces
  • Olive Oil 0 fl oz
  • Ocean salt to taste
  • Ground Black Pepper to taste
  • Thyme 1 bunch
  • Rosemary 2 sprigs
  • Fresh Bay Leaf 3 pieces
  • Dark Ale 5 fl oz
  • Water 10 fl oz
  • Baking Tomatoes 10 oz

Step-by-Step Guide

Step 1

Drizzle the bone-in beef with olive oil, season with salt and a little pepper, and place in the oven for 20 minutes at 430°F.

Step 2

Meanwhile, chop the carrots, celery, and leeks, and sauté them in a deep pot with olive oil; season with salt and pepper, add thyme, rosemary, and bay leaves, and cover for about 5 minutes.

Step 3

Then pour in the beer, add the tomatoes, and mix everything together.

Step 4

Remove the meat, add it to the other ingredients along with all the juices. Cover and let it simmer on low heat for 4–5 hours.

Step 5

Separate the meat from the bones.
