Sicilian Braised Eggplants
Ingredients
- Eggplants 2 pieces
- Oregano 1 tablespoon
- Ocean salt to taste
- Ground Black Pepper to taste
- Garlic 2 cloves
- Spanish onions 1 head
- Parsley 1 bunch
- Capers 2 spoons
- Olives stuffed with lemon 0 oz
- Vinegar essence 3 spoons
- Tomatoes 5 pieces
- Chopped almonds 2 spoons
Step-by-Step Guide
Step 1
Cut the eggplants into large pieces. Peel and finely chop the onion. Separate the parsley leaves from the stems and chop the stems finely. If using salted capers, soak them in water beforehand. Chop the tomatoes into large pieces.
Step 2
Pour a little olive oil into a skillet and heat over medium heat. Add the eggplants to the skillet, sprinkle with oregano and salt, and stir well. Cook over high heat for about 5 minutes, stirring constantly.
Step 3
Add the onion, chopped parsley stems, and finely chopped garlic, and drizzle with olive oil. Add the capers and olives, and splash with vinegar. Once the vinegar has evaporated, add the tomatoes. Simmer the vegetables on low heat for 15 minutes.
Step 4
Season with pepper, sprinkle with parsley leaves, and add almonds. Toss together and serve.
