Sichuan Duck
Ingredients
- Sesame Oil 3 teaspoons
- Duck 5 lbs
- Garlic 5 cloves
- Grated Ginger Root 0 oz
- Brown Sugar 5 oz
- Vegetable Oil 2 teaspoons
- Dry White Wine 1 cup
- Cinnamon 2 pieces
- Ground Black Pepper 2 teaspoons
- Star anise 3 pieces
- Orange zest a pinch
- Soy Sauce 1 cup
Step-by-Step Guide
Step 1
Peel and chop the ginger and garlic.
Step 2
Mix soy sauce, wine, sugar, ginger, garlic, sesame oil, and ground pepper.
Step 3
Add star anise, cinnamon, and orange zest. Bring to a boil.
Step 4
Add 500 ml of water and bring to a boil again.
Step 5
Reduce heat and simmer for 15 minutes.
Step 6
Place the duck in the sauce breast side down, and bring to a boil again.
Step 7
Reduce heat to medium and cook covered for 30 minutes.
Step 8
Turn the duck over and cook for another 15 minutes.
Step 9
Turn off the heat and let the duck cool in the broth.
Step 10
Transfer to a rack and let it dry.
Step 11
Brush the duck with vegetable oil.
Step 12
Place on a baking sheet and put in a preheated oven at 220°C (428°F) for 30 minutes, basting the duck with broth occasionally.
