
Shrimp with Pineapple in Curry Sauce

Description
Kaffir lime leaves can be purchased at Asian grocery stores or substituted with lime zest. This dish can be served with jasmine rice, as the sauce turns out very tasty.
Ingredients
- Peeled Cooked Shrimp 20 oz
- Pineapple 5 oz
- Kaffir Lime Leaves 2 pieces
- Dried Chili Pepper to taste
- Grated Ginger Root 1 teaspoon
- Lemongrass 1 piece
- Coconut Milk ½ can
- Cilantro to taste
- Lime Juice 2 tablespoons
- Olive Oil 2 tablespoons
- Ocean salt to taste
- Red Curry Powder ½ teaspoon
Step-by-Step Guide
Step 1
Marinate the shrimp in lime juice, ginger, and chili pepper for 30 minutes.
Step 2
In heated oil, sauté the diced pineapple for no more than three minutes.
Step 3
Pour in the coconut milk, add the lime leaves, lemongrass, and shrimp along with the marinade, curry, and salt to taste.
Step 4
Cook on high heat until the shrimp are done, about 5–7 minutes.
Step 5
Garnish with cilantro.
