Shrimp in Sweet and Sour Sauce

Ingredients
- Shrimp 20 oz
- Pork fat 0 oz
- Soy Sauce 2 tablespoons
- Garlic 5 cloves
- Ginger 0 oz
- Starch film 4 teaspoons
- Sugar 2 tablespoons
- Vinegar essence 2 tablespoons
- Chicken Egg 1 piece
- Vegetable Oil 15 fl oz
- Scallions to taste
- Chicken Broth 0 fl oz
Step-by-Step Guide
Step 1
Peel the shrimp, rinse them, place in a colander, and let them drain completely.
Step 2
Coat the shrimp in a mixture of egg white, starch (2 teaspoons), and cold water, then deep fry for 1–1.5 minutes and set aside.
Step 3
In a separate bowl, prepare the sauce: mix soy sauce, vinegar, sugar, broth (50 ml), starch (2 teaspoons) diluted in cold water (100 ml), julienned green onion and ginger, and finely chopped garlic.
Step 4
In the skillet where the shrimp were fried, leaving a small amount of fat, pour in the prepared sauce and cook, stirring continuously, until thickened.
Step 5
Add the fried shrimp to the prepared sauce, mix well, and pour in a little melted pork fat.
