
Shrimp and Cod Patties

Ingredients
- Shrimp 20 oz
- Cod fillet 10 oz
- Nut crumb 5 oz
- 33% Cream 0 fl oz
- Onion 10 oz
- Ground Black Pepper to taste
- Salt to taste
- Vegetable Oil 0 fl oz
- Ground Nutmeg ¼ spoons
- Carrot 5 oz
- Passata Tomato Sauce 5 oz
- Water 20 fl oz
- Oyster Mushrooms 0 fl oz
- Pasta shells 5 oz
Step-by-Step Guide
Step 1
Peel the shrimp, as the meat will be used for the patties and the shells will go into the sauce.
Step 2
Coarsely chop 100 grams of onion and carrot. Sauté them in vegetable oil until golden brown, about 15 minutes.
Step 3
Add the shrimp shells and sauté for a few more minutes until they turn red.
Step 4
Add the tomato paste and sauté over low heat for 10 minutes.
Step 5
Pour in water and add oyster sauce. Simmer on low heat for at least 1.5 hours.
Step 6
Coarsely chop the second part of the shrimp and add it to the filling. Mix thoroughly.
Step 7
Soak the bread in cream for the patties.
Step 8
Chop the remaining onion into cubes and sauté over low heat until it turns golden.
Step 9
Pass the bread, onion, cod, and half of the shrimp through a coarse grinder. Set aside a few shrimp for serving, and chop the remaining ones into large cubes.
Step 10
Grate a quarter of a nutmeg, add salt, black pepper, and coarsely chopped shrimp. Mix everything thoroughly.
Step 11
Shape the patties using a pastry ring, place them on parchment paper, and freeze them for 15-20 minutes so they hold their shape better during frying.
Step 12
Blend the sauce in a blender until smooth for 10 minutes, then strain through a sieve to remove any shell remnants.
Step 13
Fry the patties in vegetable oil until golden brown on both sides, then finish cooking them in the oven for 8 minutes at 355°F. Sear the reserved whole shrimp for 2 minutes on each side in the same pan.
Step 14
Serve the shrimp and cod patties with bisque sauce, topped with a whole shrimp, alongside your favorite side dish, and garnish with a mix of young salad leaves.
