Ingredients

  • New Potatoes 2 pieces
  • Pork fat 0 oz
  • Semi-Smoked Sausage 5 oz
  • Onion 1 head
  • White Cabbage 3 pieces
  • Coarse Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Build a fire or light charcoal.

Step 2

Cut the fat and place it at the bottom of a liter cast iron pot.

Step 3

Layer the potatoes, sliced into rings no thicker than 10 mm, onions in rings 2–5 mm thick, and bacon in slices 5–10 mm thick. Salt and pepper each layer. Fill the pot to the top. The last layer should be potatoes.

Step 4

Seal the pot tightly with cabbage, pressing it down with a piece of sod.

Step 5

Place in the coals and cover with coals from the sides, simmer for 40-45 minutes. During this time, the coals should smolder, not burn.
