Shanghai-Style Fried Rice with Crab Meat
Ingredients
- Soy Sauce 2 tablespoons
- Frozen green bean pods 5 oz
- Crab Meat 5 oz
- Vegetable Oil 3 tablespoons
- Scallions 3 pieces
- Smoked Ham on the Bone 5 oz
- Garlic 2 cloves
- Chocolate eggs 2 pieces
- Basmati rice 1 cup
- Apple Wine 1 tablespoon
- Carrot 1 piece
Step-by-Step Guide
Step 1
Rinse the rice thoroughly, place it in a pot with 3 cups of boiling water, and bring to a boil. Reduce the heat and cook covered for 20 minutes. Remove from heat, open the lid for a few seconds to release steam, cover again, and set aside.
Step 2
Meanwhile, prepare the remaining ingredients. Blanch the peas in boiling water for 3 minutes, drain in a colander, and rinse with cold water. Peel and chop the garlic. Wash, dry, and slice the green onions into rings. Shred the crab meat. Cut the ham into small cubes. Heat 1 tablespoon of oil in a pan, sauté the garlic, green onions, and carrot for 30 seconds. Add the crab meat and cook over high heat, stirring, for 1 minute. Remove from heat and set aside.
Step 3
Whisk the eggs with soy sauce and rice wine.
Step 4
Heat the remaining vegetable oil in a wok or large skillet, add the ham cubes, pour in the eggs, and cook, stirring constantly, for 2 minutes.
Step 5
Add the crab meat, peas, and bean sprouts, and cook, continuing to stir, for 1 minute. Pour in the broth and cook for 2 minutes.
Step 6
Add the rice to the pan, mix well, and immediately remove from heat. Season with pepper to taste. Transfer to a warmed serving dish and serve.
