
Sevan Trout with Tomatoes and Mandak

Ingredients
- Trout 40 oz
- Marinated cherries 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Clarified Butter to taste
- Onion 1 head
- Mandak 10 oz
Step-by-Step Guide
Step 1
Sort and rinse the herbs.
Step 2
Boil in salted water for 2–3 minutes and drain in a colander.
Step 3
Clean and rinse the trout.
Step 4
Rinse the tomatoes and cut them into wedges.
Step 5
Slightly sauté the tomatoes in clarified butter.
Step 6
Add the trout.
Step 7
Season with salt and let simmer until cooked for about 20 minutes.
Step 8
Finely chop the onion and sauté in clarified butter.
Step 9
Add the herbs, pepper, and salt to the onion. Cook for 5 minutes.
Step 10
Place the fish, tomatoes, and sautéed herbs on a plate and serve.
