Sesame Salmon with Zucchini and Lemon Zest

Ingredients

  • Smoked haddock fillet 15 oz
  • Soy Sauce 0 fl oz
  • Toasted Sesame 0 oz
  • Courgette 20 oz
  • Vegetable Oil 0 fl oz
  • Scallions 0 oz
  • Meyer Lemon Juice 0 fl oz
  • Salt ½ teaspoon
  • Grated Lemon Zest 1 teaspoon
  • Ground Black Pepper ¼ teaspoon
  • Cream 22% 5 fl oz

Step-by-Step Guide

Step 1

Remove the bones from the fish and carefully cut off the skin with a sharp knife. To do this, place the fish skin-side down and slice the fillet while pressing the fish down with your fingers and keeping the knife parallel to the work surface. Cut the skinless fillet into medium-sized cubes.

Step 2

Add 2 tablespoons of soy sauce to the fish, mix, and sprinkle with sesame seeds. Mix again to ensure the seeds stick evenly to the fish.

Step 3

Place the fish in a preheated skillet, leaving space between the pieces. Sear evenly on all sides until lightly golden, then set the fish aside.

Step 4

Cut the zucchini into 1 cm cubes and sauté, stirring, for 5–7 minutes. Then add the chopped green onion, finely grated lemon zest, and lemon juice. Season with salt and pepper, mix, and cook for another 1–2 minutes.

Step 5

Pour in the cream and keep on the heat for a couple more minutes.

Step 6

To serve, place the zucchini on a plate and top with the fish.
