Ingredients
- King Prawns 10 oz
- Scorpion fish fillet 10 oz
- Smoked haddock fillet 10 oz
- Snap Peas 5 oz
- Pineapple ½ piece
- Orange Bell Peppers 1 piece
- Orange zest 1 tablespoon
- Lime Juice ¼ cup
- Tequila ¼ cup
- Orange juice concentrate 3 tablespoons
- Scallions 0 oz
- Chopped Green Onions 1½ teaspoons
- Salt ½ teaspoon
- Ground Black Pepper ½ teaspoon
- Lime to taste
Step-by-Step Guide
Step 1
Peel the shrimp.
Step 2
On skewers, alternately thread the shrimp, diced sea bass fillet, diced salmon fillet, snap peas, pieces of red bell pepper, and pieces of peeled pineapple. Arrange in a single layer in a dish.
Step 3
In a bowl, mix lime zest and juice, tequila, orange juice, chopped green onion, cilantro, salt, and pepper. Pour the marinade over the skewers and let sit for 1 hour, turning occasionally.

Preheat the grill or barbecue.

Grill the skewers, basting with marinade, for 6-7 minutes on each side until cooked through.

Serve immediately with lime wedges.
