Sea Bass with Mint Leaves

Description
If you don't have cherry tomatoes, you can use regular ones. Sea bass can be substituted with dorado.
Ingredients
- Sea Bass 1 piece
- Marinated cherries 10 oz
- Capers 0 oz
- Olive Oil 3 tablespoons
- Fresh Mint 2 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place a sheet of parchment paper at the bottom of a baking dish (or baking tray). Lay the fish on top.
Step 2
On the sea bass, arrange the halved cherry tomatoes, add salt, pepper, and olive oil, toss in a handful of capers, cover everything with mint leaves, and place another sheet of parchment on top.
Step 3
Bake in the oven for about half an hour at 390°F.
Step 4
Remove the scales and entrails from the fish, rinse well, and dry with paper towels.
