Sea Bass with Leeks

Ingredients

  • Mixed salad greens 5 oz
  • Sea Bass 15 oz
  • Leek 1 piece
  • Potato 1 piece
  • Dry White Wine 5 fl oz
  • Fish Oil 15 fl oz
  • Lemon 1 piece
  • Salt to taste
  • White Pepper (whole) to taste

Step-by-Step Guide

Step 1

Clean the sea bass from scales.

Step 2

Gut and brush with olive oil.

Step 3

Cut the leek lengthwise and blanch for one minute, then cool.

Step 4

Season the sea bass with salt and pepper inside and out, wrap it in the leek, and place it on a tray.

Step 5

Pour wine and stock over the fish.

Step 6

Bake in the oven for 22 minutes at 355°F.

Step 7

Meanwhile, boil the potato.

Step 8

Serve with sliced potato, mixed salad, and half a lemon.

Step 9

Use the liquid from the tray as a sauce.
