Ingredients
- Olive Oil 1½ tablespoons
- Garlic 2 cloves
- Marinated cherries 20 oz
- Fresh basil leaves 1 tablespoon
- Balsamic Vinegar 2 tablespoons
- Scorpion fish fillet 4 pieces
Step-by-Step Guide
Step 1
Heat half a tablespoon of olive oil in a pan. Sauté the minced garlic for a couple of minutes until soft. Add the halved cherry tomatoes, balsamic vinegar, and salt. Reduce the heat and cook for 3–4 minutes until the tomatoes are soft. Turn off the heat, sprinkle the tomatoes with basil, and let sit for a while.
Step 2
Heat the remaining oil in a large pan, season the fish with salt, and fry for 2 minutes on each side over medium heat. Plate the fish and drizzle with the cherry tomato sauce.
