Ingredients
- Sea Bass 20 oz
- Marinated cherries 4 pieces
- Olive Oil 8 tablespoons
- Coarse Salt to taste
- Salt to taste
- Butter 0 oz
- Rosé Dry Wine 5 fl oz
- Ground Black Pepper to taste
- Fresh basil leaves to taste
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Place the branches with tomatoes on a baking sheet, drizzle with 4 tablespoons of olive oil, and season with coarse salt.
Step 3
Bake in the oven for 10–12 minutes.
Step 4
Cut the sea bass fillet into small portion-sized cubes, season with spices, and drizzle with the remaining olive oil.
Step 5
Heat a non-stick skillet, cook the fish, turning regularly, until done (be careful not to overcook the fish — it may become dry and lose its flavor).
Step 6
Remove the fish from the skillet and set aside.
Step 7
Add wine and butter to the same skillet; when the ingredients combine, add freshly ground pepper.
Step 8
Before serving the dish, pour the sauce onto plates, top with the fish cubes, and garnish with the roasted tomatoes and herbs.
