
Sea Bass in Salt Crust with Herbs

You can use herbs to your taste: parsley, oregano, thyme.
Ingredients
- Sea Bass 5 lbs
- Water 5 fl oz
- Egg white 4 pieces
- Coarse Salt 5 lbs
- Herbs 1 bunch
- Lemon 1 piece
- Olive Oil to taste
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
Rinse the fish and pat it dry.
Step 3
In a bowl, mix the egg whites and water. Then add the salt and mix well.
Step 4
Spread a third of the salt in a baking dish.
Step 5
Stuff the fish with herbs and lemon slices. Place it in the dish on the salt. Cover with the remaining salt and press down with your hands. Cover with a lid or foil.
Step 6
Bake in the oven for 40–50 minutes.
Step 7
Remove the fish from the oven and break the salt crust.
Step 8
Remove the skin from the fish and carefully transfer it to a serving plate. Drizzle with olive oil and serve immediately.
