Ingredients
- Veal 20 oz
- Breadcrumbs ½ cup
- Egg white 1 piece
- Capers ½ tablespoon
- Lemon ½ piece
- Vegetable Oil 2 tablespoons
Step-by-Step Guide
Step 1
Wash the veal (the loin or the meat from the hind leg), remove the tendons, and cut it into pieces resembling natural cutlets, but without bones.
Step 2
Pound each piece with a meat mallet, season with salt, sprinkle with pepper, dip in beaten egg, and coat with breadcrumbs.
Step 3
Place the prepared pieces in a preheated pan with oil and fry on both sides until a crispy golden crust forms; then place on a plate and drizzle with the oil in which finely chopped and blanched lemon zest and capers have been lightly sautéed.
Step 4
Top each piece with a slice of lemon, sprinkled with parsley or dill. Serve with fried potatoes or a mix of vegetables dressed with oil. Serve a salad separately - either a green salad or a vegetable salad.
