- Sweet Red Onion 0 oz
- Cream 22% 5 fl oz
- Chicken Broth 5 fl oz
- Ramsons 0 fl oz
- Whole egg 1 piece
- Chicken Egg 1 piece
- Limoncello 0 fl oz
- Meyer Lemon Juice 5 fl oz
- Powdered Sugar 5 oz
- Butter 5 oz
- Salt 0 oz
- Lemon 1 piece
- Ramsons 5 oz
- Vegetable Oil 5 fl oz
Step-by-Step Guide
Step 1
Lemon Mousse: In a double boiler at 150°F, mix the yolk, egg, limoncello, lemon juice, powdered sugar, butter, and salt. Whisk until smooth.
Step 2
Lemon Powder: Cut the lemon in half, char it on a grill or skillet until blackened, dry it into chips, and grind into powder.
Step 3
Ramson Oil: Blend ramson with vegetable oil.
Step 4
Rinse and dry the morels. Sauté the scallops and add cream with vegetable broth. Roast the onion in foil and cut it in half.
Step 5
Plate the scallops with morels, drizzle with ramson oil. Serve with lemon mousse and sprinkle with lemon powder.
