Scallops on a Bed of Tiger Shrimp

Ingredients

  • Scallops 5 oz
  • Olive Oil 0 fl oz
  • Tiger shrimp in brine 100 pieces
  • Leek 0 oz
  • Dry White Wine 0 fl oz
  • Vegetable Oil 0 fl oz
  • 33% Cream 5 fl oz
  • Goat cheese 0 oz
  • Flying fish roe to taste
  • Ocean salt to taste

Step-by-Step Guide

Step 1

Peel the shrimp and cut them in half lengthwise.

Step 2

Slice the leek into half-rings and sauté in vegetable oil, add the white wine, reduce, then add the cream and gorgonzola cheese, season with salt. Bring to a boil and thicken. Add the roe and mix.

Step 3

Place the cooked shrimp in the center of the plate, then top with the sautéed scallops. Garnish with a sprig of dill, tomato skin, and lemon.

Step 4

Sauté the scallops in olive oil.
