  • Wheat Flour 2 cups
  • Water 2 cups
  • Salt to taste
  • Cottage cheese 10 oz
  • Chicken Egg 1 piece
  • Scallions 3 stalks
  • Parsley 3 stalks
  • Safflower Oil 2 tablespoons

Step-by-Step Guide

Step 1

Dough. In a deep bowl, mix the flour and salt. Heat one cup of water until boiling, add vegetable oil to the water, then pour the mixture into the flour. Stir with a spoon while the mixture is hot, then when it cools, knead the dough with your hands until it reaches a soft, elastic consistency. Cover it and let it rest for 20 minutes, then knead again.

Step 2

Sprinkle a clean surface with a thin layer of flour and roll out the dough with a rolling pin. Use a cup to cut out circles from the dough.

Step 3

Prepare the filling. Wash the greens, dry them with paper towels, and chop them as finely as possible. In the cottage cheese, crack the egg, add salt, greens, and mix well. Shape the dumplings.

Step 4

Bring water in a pot to a boil, adding salt. Place the dumplings in the pot, and as soon as they float, cook for another 3-4 minutes. Serve with sour cream or butter. Sprinkle with greens on top.
