Sausages with Sage, Pancetta, and Fresh Tomato Salsa
Ingredients
- Chopped Sage Leaves 20 pieces
- Pancetta 8 pieces
- Chips 16 pieces
- Tomatoes 4 pieces
- Vegetable Oil to taste
- Olive Oil 1 tablespoon
- Garlic 1 clove
- Balsamic Vinegar 1 teaspoon
- Mint Leaves 1 tablespoon
Step-by-Step Guide
Step 1
Soak 8 bamboo skewers in cold water for 30 minutes.
Step 2
Meanwhile, place the sausages in a pot and cover with cold water. Bring to a boil, remove from heat, and drain.
Step 3
Preheat the grill. Cut the pancetta into thin strips lengthwise. Place a sage leaf on each sausage and wrap it with half a piece of pancetta. Repeat with the remaining sausages.
Step 4
Thread 4 sausages onto 2 skewers, piercing both ends of the sausages so that the sticks are parallel. Do the same with the remaining sausages.
Step 5
Lightly oil the grill and grill the sausages for 8 minutes, turning once.
Step 6
Meanwhile, finely chop the tomatoes and mix with olive oil, vinegar, minced garlic, and chopped mint leaves. Mix well.
Step 7
Place the sausages on serving plates and top each with a spoonful of salsa.
