Description
Sauce is what they call this roast made with pork and potatoes in the southern regions. Another dish from our 'Golden Thousand'.
Ingredients
- Pork Skewers 0 lbs
- Potato 5 lbs
- Onion 3 heads
- Wheat Flour 10 teaspoons
- Vegetable Oil 0 fl oz
- Bay leaf 2 pieces
- Clove 3 pieces
- Carrot 5 oz
- Salt to taste
- Green peppercorns to taste
Step-by-Step Guide
Step 1
Cut the meat.
Step 2
Season the ribs with salt and pepper.
Step 3

Heat vegetable oil in a skillet.
Step 5
Sauté in vegetable oil on all sides until golden brown.
Step 6
Transfer the meat to a heavy-bottomed pot.
Step 7
Pour the rendered fat through a strainer from the skillet into the pot with the ribs. Then, in the skillet where the meat was cooked, add a cup of water, bring it to a boil, and strain it again into the pot with the meat. Also add 2 more cups of hot water. Cover with a lid and simmer for 40–60 minutes.
Step 8
Peel the potatoes and cut them into two to four pieces if they are large, or leave them whole. Dice the onion into medium cubes and chop the carrot coarsely.
Step 9
Sauté the onion in vegetable oil, then add the carrot and continue to cook for another 1-2 minutes.
Step 10
Add the sautéed vegetables and potatoes to the pot with the meat. Also, add a bay leaf, a clove, and pepper, and season with salt. Cover and simmer for another 30–40 minutes, until the potatoes are tender.
Step 11
Serve.
