Sardines Fried in Egg
Ingredients
- Sardines 5 lbs
- Cotton Oil 15 fl oz
- Wheat Flour 0 oz
- Lemon 1 piece
- Chicken Egg 2 pieces
- Salt to taste

Step 1
Cleaned and gutted fish should be lightly seasoned with salt inside and out. Heat the oil in a deep fryer or a deep skillet to 180–375°F (to check, you can use a cube of yesterday's bread: at this temperature, it should brown within 30 seconds).
Step 2
Hold the fish by the tail, first dredge it in flour, shake off the excess, then dip it into lightly beaten eggs. Fry in batches in the oil until golden brown.
Step 3
Remove the cooked fish from the oil with a slotted spoon, allow excess fat to drain, and keep them warm while frying the rest. Serve immediately upon readiness, garnished with lemon wedges.
