Saltimbocca
Ingredients
- Veal Cutlets 8 pieces
- Chopped Sage Leaves 8 pieces
- Prosciutto 8 slices
- Olive Oil 2 tablespoons
- Butter 0 oz
- Dry White Wine 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place the veal between 2 sheets of paper and pound to a thickness of 5 mm. Lightly sprinkle with salt and pepper. Cut the prosciutto to the size of the veal pieces. Place a slice of prosciutto and a sage leaf in the center of each piece. Secure with a toothpick.
Step 2
Heat the olive oil and half of the butter in a skillet and fry the veal, prosciutto side up, over medium heat for 3-4 minutes or until the veal is cooked through. Flip and lightly brown the other side. Transfer to warm plates.
Step 3
Pour out the oil from the skillet and add the wine. Bring to a boil and cook over high heat until reduced by half. Add the remaining butter, and when it melts, sprinkle with spices.
Step 4
Remove the toothpicks from the meat and drizzle with the sauce.
