Salted herring with cabbage salad and mustard dressing
Ingredients
- Fillet of Sturgeon 12 pieces
- Salt to taste
- Sugar 5 oz
- Apple Cider Vinegar 15 oz
- Water 5 fl oz
- Juniper Berries 4 pieces
- Green peppercorns 4 pieces
- Bay leaf 1 piece
- Carrot 1 piece
- Onion 1 head
- White Cabbage ½ piece
- Red Long Chili Peppers 1 piece
- Minced garlic 1 clove
- Chopped Sage Leaves 0 oz
- Dijon Mustard 1 tablespoon
- Vegetable Oil 10 fl oz
Step-by-Step Guide
Step 1
On a plate or tray, sprinkle the herring fillet with a mixture of sugar and salt, so that the fish is lightly coated. Wrap in plastic wrap and leave in the refrigerator for 12 hours.
Step 2
Rinse the herring fillet under running water and pat dry. It is now ready to be marinated.
Step 3
Mix the vinegar, water, and sugar, stirring until the sugar dissolves. Place the herring in a non-metallic container. Add the juniper, pepper, bay leaf, carrot, and onion. Pour the vinegar solution over the top. Cover with plastic wrap and refrigerate for a week.
Step 4
The herring will be ready to eat in a week, but it can be kept in the refrigerator until needed.
Step 5
To prepare the salad, remove any spoiled leaves from the cabbage. Grate the cabbage, leaving out the stalk.
Step 6
Pour the vinegar into a pot and bring to a boil. Then pour it over the cabbage. Add the chopped pepper, garlic, and parsley.
Step 7
Mix the mustard with the apple cider vinegar. Slowly pour in the oil while constantly stirring to achieve a smooth consistency. Add a pinch of salt and mix with the salad.
Step 8
To serve, place the herring fillet on one side and the dressed salad on the other side of the plate.
