  • Lightly Salted Red Fish 20 oz
  • Salad Potatoes 0 lbs
  • Garlic 1 clove
  • Chopped Sage Leaves 1 tablespoon
  • Chocolate eggs 3 pieces
  • Salt to taste
  • Cotton Oil 5 tablespoons

Step-by-Step Guide

Step 1

Place unpeeled potatoes and salted cod in a pot, cover with water, and bring to a boil. Reduce the heat and simmer for about 30 minutes, until the potatoes are soft.

Step 2

Remove the cod from the pot and set aside to cool. Drain the potatoes, peel them, and mash them in a bowl. Remove the skin and bones from the cod. Break the flesh into pieces and mix it with the mashed potatoes.

Step 3

Stir in the finely chopped garlic and parsley, and add the egg yolks one at a time. In a dry clean bowl, whip the salted egg whites to a thick foam and gently fold them into the main mixture.

Step 4

Heat the oil in a pan to 355°F (a bread cube will brown in 30 seconds at this temperature). Using two tablespoons, form small balls from the potato-fish mixture, drop them into the hot oil, and fry until golden brown. Remove the finished balls from the pan with a slotted spoon and let excess oil drain. Serve immediately.
