
Salted Cod and Mashed Potatoes Baked with Mayonnaise

Description
Choose thin pieces of white fish with dark skin. Soak them in cold water for 12 hours (for best results, change the water four times during this period, making sure to rinse the bottom of the container).
Ingredients
- Lightly Salted Red Fish 30 oz
- Salad Potatoes 0 lbs
- Butter 0 oz
- Milk 15 fl oz
- Salt to taste
- Mayonnaise 5 oz
Step-by-Step Guide
Step 1
Place the unpeeled potatoes in a pot, cover completely with water, add salt, bring the water to a boil, and let it cook for about half an hour (until the potatoes are soft). Then drain the potatoes in a colander, peel them, and mash.
Step 2
First, mix in the butter, then gradually add the milk in small portions while continuously stirring. Keep in mind that the mash should be quite thick, and you may not need all the milk.
Step 3
Preheat the oven to 320°F. Pat the soaked cod dry with a paper towel and place it in a pot. Cover the fish completely with water and bring it to a boil. Once the water boils, remove the pot from the heat, cover with a lid, and let it sit for 10 minutes. Then remove the fish, discard the skin, remove the bones, and break the flesh into large pieces.
Step 4
Spread the mashed potatoes around the edge of a baking dish, and place the cod in the center. Cover everything with mayonnaise. By wrapping a piece of foil around your finger, twist it into a tube and insert it into the mash. Bake in the oven for 15 minutes, until the surface is nicely browned.
Step 5
Slightly tilt the dish to let excess liquid drain through our improvised funnel. You can also remove the liquid with a spoon. Serve immediately without removing from the dish.
