  • Young zucchini 1 piece
  • Butter 1 tablespoon
  • Lemon ¼ piece
  • Dried Dill Stems ¼ teaspoon
  • Coarse Salt to taste
  • Meyer Lemon Juice 2 teaspoons
  • Ground Black Pepper to taste
  • Smoked haddock fillet 5 oz

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Grease a sheet of parchment paper with butter.

Step 2

Cut the zucchini in half lengthwise and then into thin slices. Arrange them in a single layer on the parchment. Then add the thinly sliced shallot, butter, dill, and lemon slices. Season with salt and pepper.

Place the fish on top of the vegetables, drizzle with lemon juice, and season with salt and pepper.

Fold the parchment tightly and secure it.
