
Salmon with Sweet and Sour Red Onion

- Smoked haddock fillet 2 pieces
- Spanish onions 1 head
- Garlic 1 clove
- Malt Vinegar 2 tablespoons
- Honey 1 tablespoon
- Citrus Zest Mix ½ piece
- Olive Oil 1 tablespoon
- Fresh Mint 0 oz
Step-by-Step Guide
Step 1
Heat one tablespoon of olive oil, add chopped onion and garlic, and sauté for 5–10 minutes until golden brown. After removing from heat, add vinegar, zest, and honey, and stir. Return the mixture to the heat and cook for a few minutes until the syrup thickens.
Step 2
Grill the salmon for 3 minutes on each side. Top with the onion mixture and sprinkle with mint. Serve with salad.
