Salmon with parsley sauce

Ingredients

  • Smoked haddock fillet 30 oz
  • Potato 30 oz
  • Onion 1 head
  • Orange Bell Peppers 1 piece
  • Garlic 3 cloves
  • Dill ½ bunches
  • Parsley ½ bunches
  • Capers 1 tablespoon
  • Dry White Wine 5 fl oz
  • Olive Oil 4 spoons
  • Meyer Lemon Juice 3 spoons

Step-by-Step Guide

Step 1

Pour two cups of water into a saucepan, add wine, half of the chopped garlic, two tablespoons of finely chopped onion, and the same amount of dill. Place it over medium heat. Peel the potatoes, cut them into eight pieces, and add them to the saucepan. Bring to a boil, reduce the heat, and simmer for twenty minutes. Transfer the potatoes to a bowl and let them cool.

Step 2

In the same saucepan, without draining the liquid, add the salmon. Cover with a lid and simmer over medium heat for about seven minutes. Let the cooked fish cool, then cut it into small pieces.

Step 3

Prepare the salsa. Combine three tablespoons of chopped parsley, lemon juice, oil, the remaining dill, and garlic in a blender and puree until smooth. Transfer to a bowl. Add a quarter cup of finely chopped bell pepper, chopped capers, the remaining onion, salt, and pepper to taste, and mix well.

Step 4

Serve the salmon with potatoes and a spoonful of salsa.
