Salmon with Oranges and Fennel
Ingredients
- Oranges 2 pieces
- Fennel 1 piece
- Pitted olives 0 fl oz
- Olive Oil 0 fl oz
- Meyer Lemon Juice 0 fl oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Salmon bellies 4 pieces
- Orange juice concentrate 0 fl oz
Step-by-Step Guide
Step 1
Using a sharp knife, peel the oranges and carefully cut out the segments. Transfer to a bowl and add the orange juice, thinly sliced fennel, halved olives, lemon juice, and 1 tablespoon of olive oil. Season with salt and pepper, and gently mix.
Step 2
In a large skillet over medium heat, heat the remaining oil and place the fish in the pan. Sear for about 3 minutes, flip, and cook for another 1–3 minutes.
Step 3
Plate the fish and top with the fennel salad.
