Salmon with Orange Dressing

Ingredients

  • Smoked haddock fillet 0 lbs
  • Olive Oil 10 fl oz
  • Shallot 2 heads
  • Oranges ½ piece
  • Salt to taste
  • Balsamic Vinegar 2 tablespoons

Step-by-Step Guide

Step 1

In a large non-metallic bowl, pour in the oil and place the salmon fillet. Marinate, turning occasionally, for 20 minutes.

Step 2

Preheat the grill, brush the grate with the marinade oil; the remaining oil will not be needed. Season the fillet with salt on both sides and grill for 4 minutes on each side until cooked (the flesh should easily flake apart).

Step 3

While the fish is grilling, prepare the oil-vinegar dressing. Chop the shallots, squeeze the orange juice, and cut 3 strips of zest. Finely chop the zest, mix the orange juice, balsamic vinegar, oil, and a pinch of salt in a bowl. Add the shallots and orange zest.

Step 4

Serve the salmon on a warmed plate and offer the dressing on the side.
