Salmon with Honey Sauce and Blueberries

Ingredients

  • Steaks 3 pieces
  • Fresh Berries 2 tablespoons
  • Honey to taste
  • Dried Rosemary a pinch
  • Safflower Oil to taste

Step-by-Step Guide

Step 1

Heat sunflower oil in a skillet (just a little, enough to prevent the fish from burning).

Step 2

Place the steaks in the skillet skin-side down and let them sear slightly.

Step 3

Cut some of the blueberries in half, but not all. Reserve some for garnish, but you can use them all for cooking.

Step 4

While cooking, carefully flip the steaks, drizzle with honey, sprinkle with oregano (a little, optional), add the blueberries (they should slightly soften); continue flipping until you are sure the fish is cooked.

Step 5

Serve the fish on a bed of salad leaves or grilled asparagus, for example.

Step 6

Drizzle with the honey and berry sauce, and squeeze some lemon on top.
