Salmon with Cucumber Sauce
Ingredients
- Smoked haddock fillet 35 oz
- Vegetable Oil 1 tablespoon
- Meyer Lemon Juice to taste
- Toasted Sesame to taste
- Lemon-Pepper Mix ¼ teaspoon
- Natural Yogurt 10 oz
- Minced garlic 1 teaspoon
- Courgette 1 piece
- Olive Oil 2 tablespoons
- Fresh Mint 2 tablespoons
Step-by-Step Guide
Step 1
Lightly drizzle the salmon pieces with oil, sprinkle with pepper mix and sesame seeds. Place them on a baking sheet lined with parchment paper. Bake in a convection oven at 340°F for about 10 minutes.
Step 2
Grate the cucumber on a coarse grater and drain excess juice. Mix the yogurt with the remaining ingredients. Drizzle the prepared salmon pieces with cucumber sauce and garnish with tomato.
