  • Sweet Corn Sticks 2 pieces
  • Tomatoes 2 pieces
  • Avocado 2 pieces
  • Spanish onions ½ head
  • Chopped Sage Leaves 2 tablespoons
  • Olive Oil 3 tablespoons
  • Coarse Salt to taste
  • Meyer Lemon Juice 2 tablespoons
  • Ground Black Pepper to taste
  • Salmon bellies 4 pieces
  • Vegetable Oil to taste
  • Sitimy spice blend ½ teaspoon

Step-by-Step Guide

Step 1

In boiling water, cook the corn cobs until tender, about 4 minutes. Slightly cool and carefully cut the kernels off with a sharp knife. Transfer to a bowl.

Step 2

Add finely chopped tomatoes, finely chopped avocados, finely chopped onion, parsley, 2 tablespoons of olive oil, and lemon juice. Season with salt and pepper. Mix well.

Step 3

Preheat the grill or barbecue.

Step 4

Brush the pieces of fish with oil, sprinkle with the spice blend, and season with salt and pepper. Place on the grill, skin side down, and grill for 4–5 minutes on each side until cooked through.

Transfer the fish to a plate, top with the sauce, and serve immediately.
