Salmon skewers with cherry tomatoes in rosemary marinade
Ingredients
- Dried Rosemary 2 teaspoons
- Olive Oil 2 teaspoons
- Garlic 2 cloves
- Meyer Lemon Juice 1 teaspoon
- Coarse Salt ½ teaspoon
- Grated Lemon Zest 1 teaspoon
- Ground Black Pepper ¼ teaspoon
- Smoked haddock fillet 20 oz
- Marinated cherries 15 oz
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
In a bowl, mix the chopped rosemary, olive oil, minced garlic, lemon zest and juice, salt, and pepper. Add the fish cut into small pieces and mix well.
Step 3
On skewers, alternate threading cherry tomatoes and pieces of fish.
Step 4
Place on the grill and cook, carefully turning, for 4–6 minutes until cooked through.
