Description
Instead of parsley, you can use finely chopped fresh basil or any other herb to taste in the filling.
Ingredients
- Salad Potatoes 20 oz
- Smoked haddock fillet 20 oz
- Parsley 1 bunch
- Wheat Flour 1 tablespoon
- Lemon 1 piece
- Chicken Egg 1 piece
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the peeled potatoes, cut into small slices, in salted water.
Step 2
Grate the salmon fillet, removing the skin and bones, season with olive oil and salt, and steam for 10 minutes (use an electric steamer or a colander placed over a pot of boiling water).
Step 3
Once the potatoes are ready, drain and mash them in a large bowl with a fork. Add the cooled fish and mash it as well, then add the flour, egg, chopped parsley, and salt and pepper to taste. Squeeze in a few drops of lemon juice and grate a little zest. Mix well.
Step 4
On a work surface, sprinkle some flour and shape the mixture into small round patties, coating them in flour to prevent sticking.
Step 5
Fry the patties as usual in vegetable or olive oil, about 3-4 minutes on each side.
