Salmon on a Bed of Roasted Tomatoes
Ingredients
- Medium-dry sherry 0 fl oz
- Honey 2 tablespoons
- Garlic 1 clove
- Lime 1 piece
- Soy Sauce 3 tablespoons
- Smoked haddock fillet 25 oz
- Tomatoes 20 oz
- Olive Oil 5 tablespoons
Step-by-Step Guide
Step 1
For the marinade, mix sherry, honey, garlic, soy sauce, lime zest, and lime juice. Place the fish in a shallow dish and pour the marinade over it. Cover with plastic wrap and refrigerate to marinate overnight.
Step 2
Preheat the oven to 390°F. Place the tomatoes cut side up on a baking sheet and drizzle with a little olive oil. Roast for 20–25 minutes.
Step 3
Meanwhile, heat some olive oil in a large skillet. Add the salmon and sear over high heat for 5 minutes. Season to taste. Arrange the tomatoes on plates, place the salmon fillet on top, and drizzle with the remaining marinade. Serve with a wedge of lime and rice.
