Ingredients
- Pork fat 6 pieces
- Sage to taste
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
- Salmon 3 pieces
Step-by-Step Guide
Step 1
Prepare each piece of salmon. Remove the skin and bones using a sharp knife.
Step 2
Wrap each piece in a spiral shape to form a medallion.
Step 3
Wrap each medallion with two strips of pork fat. Tie each medallion with kitchen twine, placing sage leaves between the twine and the pork fat.
Step 4
Sear the medallions in a skillet with olive oil for 1.5 minutes on each side, seasoning lightly with salt and pepper.
