Salmon in kataifi pastry

Ingredients

  • Smoked haddock fillet 30 oz
  • Butter 5 oz
  • Almond 0 oz
  • Kataifi dough 5 oz
  • Dill 0 oz
  • Parsley 0 oz
  • Cilantro 0 oz
  • Apple Cider Vinegar 10 teaspoons
  • Mustard Greens 5 teaspoons
  • Paprika 2½ spoons
  • Olive Oil 5 teaspoons
  • Honey 5 teaspoons
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Add 100 grams of butter and almonds to a saucepan, and sauté for five to seven minutes, stirring occasionally.

Step 2

Cut the salmon fillet into 20 equal pieces. Season with salt and pepper. Wrap the fish in dough similar to that used for Eastern sweets. Fry for five minutes in the remaining butter.

Step 3

Finely chop the almonds.

Step 4

Tear the tops of the herbs into a bowl. Add salt and drizzle with the oil used to fry the nuts.

Step 5

In a bowl, whisk together the mustard, paprika, vinegar, olive oil, and honey.

Step 6

Place the fish on a plate and drizzle with honey-mustard sauce. Top with a salad of greens and sprinkle with almonds.
