Ingredients

  • Fresh basil leaves 20 oz
  • Olive Oil 2 tablespoons
  • Salmon bellies 2 pieces
  • Shallot 1 head
  • Pitted olives 0 oz
  • Honey 1 tablespoon
  • Balsamic Vinegar 3 tablespoons
  • Light Raisins, Seedless 0 oz

Step-by-Step Guide

Step 1

In a large skillet, pour a few tablespoons of water and place over medium heat. Add half of the spinach and stir with two wooden spoons until it becomes soft, about 2 minutes. Add the remaining leaves, stir, and cook for a while, ensuring the spinach retains its color. Transfer to a colander set over a bowl.

Step 2

Wipe the skillet and add 1 tablespoon of oil. Place over medium heat. Season the fish with salt and pepper and place it in the heated skillet. Cook until golden brown for 3 minutes, then flip and cook for another 3-4 minutes until done. Transfer to plates.

Step 3

Wash the skillet, dry it, and add 1 tablespoon of olive oil. Add finely chopped shallot, half of the olives, and raisins. Cook for 1 minute, then add the spinach, mix well, and cook for another minute. Season with salt and pepper and pile onto plates next to the fish.

Step 4

Pour balsamic vinegar and honey into the skillet. Bring to a boil and cook for 30 seconds. Drizzle the glaze over the fish and spinach, and serve.
