  • Butter 5 oz
  • Whole egg 4 pieces
  • Meyer Lemon Juice 2 tablespoons
  • Olive Oil 2 tablespoons
  • Smoked haddock fillet 4 pieces
  • Spices to taste

Step-by-Step Guide

Step 1

Melt the butter in a pan over low heat. Skim off the foam and let it cool.

Step 2

Whisk the yolks with 2 tablespoons of water for about 30 seconds. Place over a double boiler and whisk for another 2-3 minutes. Remove from heat.

Step 3

Gradually add the cooled butter to the egg mixture in small portions, whisking constantly. Add lemon juice and spices.

Step 4

In a large skillet, heat the olive oil over high heat and fry the fish for 2 minutes on each side. Serve with the sauce.
