  • Salmon 0 lbs
  • Bay leaf 3 pieces
  • Garlic 3 cloves
  • Ground Black Pepper to taste
  • Lemon 1 piece
  • Ocean salt 5 lbs
  • Thyme 1 sprig
  • Water 5 fl oz

Step-by-Step Guide

Step 1

Pour half of the sea salt into a baking tray. Zest the lemon and cut it into strips, then add it to the sea salt.

Step 2

Pour in 100 ml of water and mix — the main thing is to achieve a consistency like wet sand (carefully calculate the amount of water).

Step 3

Gut the salmon, stuff it with a sprig of rosemary and thyme, then add 3 cloves of garlic with the bay leaves.

Step 4

Create a 'mattress' from the sea salt mixed with lemon zest, place the fish on top, then take the remaining salt, mix it with water, and cover the fish completely with the sea salt.

Step 5

Place in the oven at 390°F for 20–25 minutes.

Step 6

Tap the 'shell' of salt with the blunt side of a knife and separate the salt with the skin from the fish, placing the flesh on a plate.
